This simple Hokben salad recipe is always suitable for various Asian-style fried side dishes, such as egg chicken rolls and katsu. The taste of the sauce is light and slightly sour, combined with sliced carrots and cabbage.     Cut the carrots into thin strips lengthwise, set aside.

    Mix 100 ml of water with vinegar, sugar and salt. Mix well, then add the carrot slices. Store for an hour in the refrigerator.

    Slice the cabbage thinly then soak it briefly in ice water to make it crunchy in texture.

    In a small bowl, combine all the sauce ingredients, mix until smooth.
